I’m sick so this blog will be short and definitely not clever. I know, I’m sad about it too. But I do have a quick and easy meal idea for you. It all started because I had left over leeks that I needed to use up before they went bad. Leeks are expensive so I would cry if they rotted buried at the bottom of my vegetable drawer.
I googled “chicken and leeks” and a bunch of really complicated recipes came up. But hidden among them was this simple treasure that I share with you today. My version is a smidge different than the one I found online, but not original enough to take credit.
Start with Just Bare chicken thighs, apples and leeks.

Cut the apples and leeks into wedges, and lay them in a glass baking dish. Give them a little salt, pepper, EVOO and rosemary.

Lay the chicken on top and season with salt, pepper, EVOO and rosemary. Pop it in the oven for about 40 minutes at 375.

It’s ready when the chicken is done and the leeks are browning on the edges.

I served it with fresh sliced bell pepper and some broccoli, but something hearty like potatoes would have been nice with it. Hope you enjoy it!
